Roasted Potatoes and Artichokes With Feta

My mom’s best friend is pretty amazing and always brings the best food to gatherings — ie: her dishes usually involve bacon. This is a recipe that she brought to one of the many holiday events we have spent together. It’s really easy, perfect for parties, and you won’t look like a fool when you bring yet another dish that features “cream of whatever” soup.

Ingredients

  • 2 lbs. small red potatoes, quartered
  • 28 oz. quartered artichoke hearts, drained
  • 2 tsp. dried thyme
  • 1 T. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. crumbled feta cheese

Directions

Preheat oven to 425°. Combine all ingredients except for the feta. Toss well and spoon into a greased 9×13 baking dish. Bake for 40 minutes or until potatoes are tender, stirring every 15 minutes or so. Remove from oven and transfer into a bowl. Add the feta and toss well.

Serves 8.
