Gnocchi That’s a hell of a lot easier than pie
So, a few years ago I was introduced to the wonderful world of gnocchi. How I didn’t know of this for the bulk of my life I’ll never know. Frankly given my love of all things pasta or potato related, I feel like I missed out on a lotta good years of stuffing my face with this delectable treat. Anyways, I suck at presentation and I hate recipes that call for too much shit. This is a tasty tasty treat that just looks fancy. It takes like 20 minutes and even LB will eat it, without being told it’s a crabby patty… that means it’s good shit. Trust me on this one.
Ingredients:
- 2 9-ounce packages refrigerated gnocchi or one 17.5-ounce package shelf-stable gnocchi
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 1 pound Italian Sausage (I use turkey sausage to save the calories for my adult beverages)
- 1 clove garlic, chopped
- bag or 2 of baby spinach
- kosher salt
- black pepper
- Grated Parmesan cheese
Directions
- Cook the gnocchi according to the package directions, reserving 1/4 cup of the cooking liquid.
- Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the sausage and cook, crumbling it with a spoon, until browned, 5 to 7 minutes.
- Add the garlic, spinach, salt, and pepper and cook, tossing frequently, until the spinach wilts, about 3 minutes.
- Add the drained gnocchi, the reserved cooking liquid, and the Parmesan and toss. Divide among individual bowls and sprinkle with additional Parmesan.
